Good Buy Pancakes

Apologies on the late post — you’ll understand since this is coming from a girl who’s moving, packing, and planning a family gathering all in the same week.

I was pacing back and forth across the house trying to determine what I should store, pack, and toss, when I realized I mostly just wanted to see my friends (cue: Celine Dion music).  But it’s a busy time of the year, and I wasn’t positive how to get them all in the same place.  Disambiguation: I’m really selfish and wanted to guarantee that they would all stop by & say bye, despite whatever else they had going on.  But it’s kinda hard to round them all up.

Solved: Pancake Party.  Pancakes are that weird breakfast food that people secretly want all day long.  Plus there are maybe 85 different types of and toppings for pancakes, so there’s really no one out there who doesn’t love them.  Could pancakes be the perfect people pleaser? They sure got eaten fast enough.

While I was packing I invited friends to come & go, grab a free meal, get creative if they want, and say some heartfelt farewells.  Possibly it was the easiest party I’ve ever hosted (with help from social media, Sams Club, & a GroupMe text explosion).

So here’s the run-down: get a GIGANTIC bag of pancake mix from Sams for about $8.  I was a bit uncomfortable at first buying this because you just add water to it and that makes batter somehow (my all-natural roots are cringing), plus the brand is called Krusteaz…. but it makes like 300 pancakes so it’s totally worth it, if only for the experience.  It’s also only 8 dollars, so this good bye came at a good buy.

We made it bring-your-own topping, but also a top-with-the-leftovers-you-can-upcycle-into-pancakes.  Need ideas? Here’s some surprisingly good (well, at a minimum, interesting…) toppings we used:

• Berry compote (cook down berries with sugar)

• Chocolate Pancakes
