Wanna know the simplest, fewest-ingredient, cheapest, most-delicious dish you could ever bring to a potluck?
Roasted Garlic.
I like to eat this plain, since it’s delicious on it’s own. But you can also serve it smashed onto bread, or mashed up into dips or spread. I think it’s awesome mashed up with rosemary as a stuffing for grilled food. Today I ate it plain and spread over bread, alongside steamed chard and carrots.
It’s literally this simple: peel the outer layer of a couple heads of garlic. Trim the tops, revealing the inside of each clove. Coat lightly with olive oil. Bake at 400F for about 30 minutes.

The cooking process depletes some of those bad-breath enzymes, so you neither have to worry about terrible breath. Plus, since it wards off vampires (ie mosquitoes), you can keep all your blood inside your body. I think the important thing to remember here is that Garlic is as Good as Ten Mothers. It really does have all kinds of benefits — as Les Blank would have us all remember.
