Summer gardening always means one thing when you’re in Texas: heat.
Not only is it 85F when you get out of bed in the morning, it’s a hundred degrees by the afternoon when you finally find time to harvest.
When the scorching heat isn’t boiling your blood, it’s busy drying out your season of plenty–how many tomato, squash, eggplants do I have to lose to the lack of shade in the clay-filled yard??
On the (literally) bright side, peppers of all kinds fight the fiery heat with a fore of their own. These spicy summer species are great for the dog days, and will enhance any dish with their spicy sweetness whether incorporated raw, roasted, or stewed.
Too hot to handle? Remember the longer you cook a pepper, the more the chemicals that create its spice break down, turning down the heat you feel on your tongue. If you’re ever worried you’ve added too much spice, just keep things cooking for a bit longer!
