Grits + Salsa

I’ve always loved grits.

Well, I take that back.  The first time I tried them, I thought grits we gross.  But after that and forever more I did and will continue to love grits.  I find that it’s a common thing (if you think you don’t like them, try them once more) for many people.

The problem is, it always seems like some guilty pleasure — normally grits are loaded with salt and butter, and half the time the dish also includes copious amounts of cheese.

Don’t get me wrong.  I do love me some cheesy grits.  It’s a Southern staple that ‘sticks to your ribs’ and which any southern foodie can’t ignore.  It’s right there alongside cobbler and okra.

Recently I discovered that there was a less guilty, still delicious way to love grits: eat them with salsa.  This tex-mex twist on a deep south tradition is savory and still packed with the southern comfort I’ve always loved.  Plus, with my on-going love of salsa in all its forms, it’s a match made in heaven.  Did I mention it’s easy to make?

Grits can be found at any grocery store (at least, the ones I’ve been to), and all you have to do is add water and either microwave or heat over the stove.  That said, if you’ve never made them at home, be warned: the remnants of grits after you finish eating them quickly turn into a glue the strength of concrete — seriously, I’ve considered using it to superglue broken furniture back together.  The trick is to just rinse out your dishes as soon as your done with them; do that and you won’t have any problems at all.

Once cooked, still in your favorite salsa — the whole process takes about 3 minutes if you use your microwave!  Try this worry-free and almost instant breakfast soon!
